Salmon and vegetable pasta
Serves 1

This recipe combines classic ingredients to create a satisfying, healthy meal. It doesn't take long to prepare so is a great choice for weeknights, and is impressive enough for entertaining, too. 
Ingredients

100g salmon (tinned or fresh)

3 stalks asparagus, cut

½ cup tomatoes, sliced

1 cup spinach

½ cup mushrooms, sliced

½ onion, sliced

1 tsp minced chilli

Herbs (dried or fresh) – I used thyme, parsley and oregano

Pepper

Serve with lemon or lime

Note: In this recipe you could use any vegetables you have in the house.

Method

Add 2 cups of water to saucepan and bring to boil before adding pasta. 

Spray frypan with cooking oil. Fry salmon until cooked through and remove from heat. 

In the same pan, fry onion and chilli until soft.  Add all vegetables and cook for 3-5 minutes or until cooked through. Add salmon and herbs and combine. 

Drain cooked pasta and stir pasta through salmon and vegetables. 

Serve with a slice of lemon/lime for a zesty flavour.
